What butcher do you use?
After we have a brand inspection, we load the cattle up and the cattle have a 3-hour ride to Callicrate Cattle Co in St. Francis, KS. Callicrate is a USDA inspected slaughter and processor providing full retail-ready custom processing to producers of livestock interested in selling more direct to their own customers, allowing other producers an alternative to the below-cost-of-production commodity markets.
Restoring a fair share of the food dollar to the family farmers and ranchers that produce our food aligns with Callicrate’s goal of rebuilding rural communities, while providing consumers with the best possible meats from well-managed, humanely raised livestock.
If the name “Callicrate” sounds familiar, it should be, its the last name of local food champion, Mike Callicrate, owner of two retail stores, Ranch Foods Direct, in Colorado Springs.

We rent space at the JIAN Cold Storage facility (also known as ROMAR) in Colorado Springs. Pickups are by appointment only, as we don't have someone there full-time.

Fridays, Saturdays & Sundays by appointment only! This is our private residence and we do not have an on-farm store.
Is delivery available?
Sorry, no we don’t. On top of farming/ranching/being a mom, Katie also has a full time job. Part of supporting local is recognizing that the customer has to put in a little work too.
Do you ship?
The short answer is, YES! We are working hard to figure out shipping this week. Shipping begins in November once temperatures cool down.
